Try this Recipe for Cinnamon Flat Cookies for the Diabetics in your group

Surprise the diabetics among your family and/or friends with these tasty little Cinnamon Flat Cookies.  These tasty little Cinnamon Cookies are pretty drizzled with a sugar-free “sugar” glaze.  Hint:  For the Christmas holidays, tint half of the drizzle green and half red.  Diabetics deserve special cookie treats, too.

CINNAMON FLAT COOKIES

1 3/4 cups all-purpose flour

1/2 cup Splenda granular

1 1/2 tsps ground cinnamon

1/2 cup cold butter

3 egg whites, divided

1 tsp vanilla extract

1 tsp water

Preheat oven to 350 degrees.  Grease a 15 x 10-inch jelly roll pan; set aside.

In a medium mixing bowl combine the flour, Splenda, cinnamon, salt, and nutmeg.  Using a pastry blender or two knives cut in the butter until the mixture resembles coarse crumbs.  Beat in two of the egg whites and the vanilla.  Mix the dough with your hands until it forms a soft dough.

We diabetics have a “sweet tooth” every now and then just like everyone else.  And fortunately with modern medicine and the advances in available foods, we can indulge ourselves from time to time.  If your or a loved one are diabetic, try these delicious Fudgy Chocolate Walnut Brownies.  They are diabetic friendly and make a good option for diabetic friends or family members occasionally.  If you are having serious diabetic problems, I suggest you forgo the 1/2 cup of sugar and add another 1/2 cup of Splenda.  Only you know how severe your problems are and how to judge what is best for you. 

FUDGY CHOCOLATE WALNUT BROWNIES

Easy Chicken Cacciatore Meal With Whole Wheat Spaghetti Menu and Recipes

This menu features a quick and easy recipe for chicken cacciatore, a warm spinach salad and a sugar-free white cake with various topping options, to finish off the meal.  Quick, easy, and healthy, too.  Try this meal.  You’ll be glad you did.


EASY CHICKEN CACCIATORE

2 tbsp olive oil

2 lbs boneless, skinless chicken breasts and/or thighs

1 cup thinly sliced onion

1 cup thinly cut strips of green bell pepper

1/2 cup diced celery

2 tbsp Tomato Basil Garlic blend (such as Mrs. Dash)

1 – 14 1/2 oz can diced tomatoes, undrained

1/2 cup red cooking wine

Cooked whole-wheat thin spaghetti for 4 to 6 servings.

5 Classic Holiday Cookie Recipes plus Cookie Making Tips

When it comes to the Holidays, I always look forward to baking some cookies for my family. I tend to go overboard with baking cookies. I usually bake 12-14 different varieties.

I would like to share a few cookie making tips with you today.

1. Unbaked dough can be covered and refrigerated for up to 24 hours. Dough can also be frozen for up to 9 months.

2. Dip cookie cutters in flour or confectioner’s sugar, shake off excess before cutting out cookies.

3. Line your baking sheets with Parchment Paper or a Silicone Baking Mat to make clean up easier.

4. Spray your spoon with non-stick cooking spray. This will help the dough to slide off easier.

5. Spray your beater blades with non-stick cooking spray to help prevent dough from sticking on them.

6. Remove your cookies from the oven 1-2 minutes before the recommended baking time. They will finish baking on the baking sheet.
